All Day Breakfast Burger

Lots of effort for the best breakfast burger ever.

Probably the most bonkers of them all - the All Day Breakfast Burger. We called it that because, realistically, you’re not making something this OTT first thing in the morning… but luckily, it works any time of day.

Inside, you’ve got bacon jam, crispy, golden homemade hashbrowns, two smashed beef patties, and a perfectly cooked egg on top - truly the breakfast of champions.

Hash Browns & Beef Tallow

Using beef tallow to cook hash browns is, in my opinion, the tastiest option. You can absolutely use regular cooking oil to save yourself the hassle, but beef tallow is easy to find at most supermarkets and butchers and is well worth it if you can get your hands on some.

If you want the cheapest option, ask your local butcher for around 3 kg of beef fat trimmings. Trim away any visible meat so you’re left with pure fat, then add it to a large pot with ½ cup cold water. Place it on the stove over medium-low heat and cook for 2–3 hours. The water helps prevent burning and allows the fat to render slowly. It will eventually evaporate, leaving you with clean liquid fat.

Strain the tallow through a fine sieve lined with muslin cloth and you’ll have homemade, inexpensive beef tallow.

I use beef tallow often for searing steaks or cooking smash patties. It has a very high smoke point and adds a rich umami, meaty depth to anything you cook with it.
