This one started with the onions. Slowly cooked down until soft, sweet, and deeply savoury - inspired by the Woolworths onion marmalade, but taken in a less jammy, more caramelised direction. From there, it was an easy call: crispy bacon for salt, a blue cheese sauce for bite, and a burger that really doesn’t need much else.
