A simple caesar salad -
with its crunchy dressed romaine, crispy croutons, garlicky creamy sauce, covered in parmesan, and lots of cracked pepper. Theres really nothing like it. For me - its one of the few perfect salads… especially when served with a crisp coke.
Everyone makes it a bit differently but something that I am firm about is it has to be flavourful! It needs to be loud - it’s not the type of salad that sits on the table forgotten about. I want it to speak to me - I want to taste the garlic, parmesan and slight tinge of anchovy otherwise it might as well be one of those bottled “caesar dressings” you buy which is basically just mayo in disguise.
With this recipe - although a very playful rendition of the real thing - we made sure to keep its essence alive - the saltiness, the richness, and that all-important crunch. Think of it as everything you love about a Caesar… just stuffed into a taco.
