If there was an intrusive thought that became a sandwich, it would be this one - the Nacho Sub.
But there’s a story behind it. We actually made a version of this sandwich about six months into content creation - a terrible version, might I add - but at the time we were so hyped about it, we really thought it was such a good idea.
Back then, we were both working full-time jobs on top of making content, so filming was a bit of a juggling act. Matt however had a day off and had prepped the meat during the morning, and that night we had a dinner to attend. The plan was simple: come home after, film the rest, and call it a night - easy!!
Except… as most dinners go when you’re 24, one drink turned into five. So when we got home, we were definitely not sober - but ofcourse, decided to film anyway.
Picture two drunk toddlers trying to cook, film, and work a camera at the same time. It ended with us messily eating this so-called Nacho Sandwich, laughing uncontrollably, and creating what is easily the worst footage we’ve ever shot.
Safe to say, that video will never see the light of day.
But ever since that night, we’ve been fixated on doing it justice - because as chaotic as it was and sounds, it was also really good.
So here it is, finally, in all its glory: the Nacho Sub.

Homemade Nacho Cheese
I’ve never actually made nacho cheese from scratch before. After doing some research, I discovered there are quite a few ways to make it, but they all follow a similar idea: melted cheese mixed with spices and usually some milk or cream. I personally didn’t want any “plastic” cheese, so I went with a blend of mature cheddar for depth and Red Leicester for colour and richness.
If I’m honest, it was absolutely delicious! I’ve had my fair share of nachos, and I’ve always been a little freaked out by the runny, overly shiny, plasticky cheese that’s often bland. However, making this version completely changed my perspective - it opened my eyes to what truly good nacho cheese can taste like.
