Just a quick one from me this week, it’s been go go go since we got back from a our little trip to the Lakes and since we got back to Manchester, surprise surprise, it’s rained every single day. At one point I’m pretty sure there was rain, sun, hail and wind within a 2 hour period.
However, there were things in my week that made up for the lack of sun! One - I made my first English Braai (BBQ) on the weekend, regardless of the bad weather it was just so nice to cook and eat outside again, one of the things I miss the most about living in South Africa. Two - we have had a good couple of jobs come in! Which I hope doesn’t sound weird, it’s just - the reality of moving countries is so scary and having work makes all the hard times getting here feel worth it. So been very busy filming up a storm for some very exciting brands. Which I’m sure you will see very soon.
And lastly, another peak of this week was these Vodka Chicken Parm Sliders. I made 10 sliders and ate 8 of them over 2 days. Two of them escaped into other peoples mouths but the others slid down so quickly I forgot how many I ate. They are so simple and so tasty that they need no sides, just as they were was good enough for me.

Leftovers
One thing that I do really like about this recipe is that there is plenty if tomato vodka sauce left over. The best thing to do is put the remaining sauce into 2 different containers and pop them into the freezer. Then when you need them you just take them out, add the sauce to a pan and reheat it over a low heat. That’s half the work most likely already done.
I love to make three particular pasta shapes called Orecchiette, Conchigliette or Lumache. They are shell shapes that have a little pocket to capture some of the sauce. Best way to eat it is to cook the pasta, then mix through the sauce and then place on a baking tray with cheese on top and whack it under the grill to caramelise. Add a few chopped chillies or a couple dollops of pesto and you are winning with a quick 15 minute dinner.
